This fonio pilaf celebrates the rich flavours and nutritional benefits of this ancient grain, while also showcasing the vibrant colours and textures of seasonal vegetables. It’s a hearty and wholesome dish that’s perfect for sharing with family and friends, bridging the gap between tradition and relationships around the modern dinner table.

Ingredients:

– 1 cup fonio

– 2 cups vegetable broth

– 1 small red onion, diced

– 2 cloves garlic, minced

– 1 red bell pepper, diced

– 1 yellow bell pepper, diced

– 1 zucchini, diced

– 1 carrot, diced

– 2 tablespoons olive oil

– Salt and pepper to taste

#### For the Herbed Yogurt Sauce:

– 1 cup Greek yogurt

– 2 tablespoons chopped fresh parsley

– 2 tablespoons chopped fresh mint

– 1 tablespoon lemon juice

– Salt and pepper to taste

Instructions:

1. Preheat your oven to 400°F (200°C).

2. In a large mixing bowl, toss the diced vegetables with olive oil, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

3. Meanwhile, rinse the fonio under cold water until the water runs clear. In a medium saucepan, bring the vegetable broth to a boil. Stir in the rinsed fonio, reduce the heat to low, cover, and simmer for about 5-7 minutes, or until the fonio is tender and the broth is absorbed.

4. While the fonio is cooking, prepare the herbed yogurt sauce by combining the Greek yogurt, chopped parsley, chopped mint, lemon juice, salt, and pepper in a small bowl. Mix well and set aside.

5. Once the fonio is cooked, fluff it with a fork and transfer it to a large serving bowl. Add the roasted vegetables and gently toss to combine.

Serve the fonio pilaf warm, topped with a dollop of herbed yogurt sauce. Garnish with additional chopped herbs if desired. Enjoy the Ancient Grains Delight!
