The first time you serve stuffed courgette flowers, someone at the table will assume you have been cooking all afternoon. You will not correct them, because there is no need. The truth is that a courgette flower filled with soft ricotta and fried for a couple of minutes is one of the simplest dishes in this column, and one of the most quietly spectacular, a golden blossom that shatters into the herbed cream inside. It is the dish that turns a few minutes at the stove into something people remember.

The only real catch is that courgette flowers do not travel and barely keep, which is exactly why growing your own changes everything. A single plant in a large pot or a sunny bed will hand you flowers all summer, and you cook them within hours of picking, when no shop could ever sell them so fresh.
